Vibrant citrus brighten up the darker winter days, whether in the fruit bowl or hanging in the tree. Whilst they all have their distinct flavours and uses; my favourite citrus fruit has to be the versatile lemon.
If you are lucky enough to have a lemon tree – or neighbours with one – you will likely know the winter challenge of what to do with them all, and the endless searching for the answer for, ‘What to make with lemons?’

So, with that in mind, I have put together this collection of recipes using lemons.
From the classic lemon drizzle cake (you may know it as lemon syrup cake!) to the most beautiful Italian almond and lemon biscuits. Of course lemon is not just for sweet dishes, bring freshness to chicken dishes and cutting through the fattiness or richness or dishes like the seasoning in this German goulash; or used to give a fresh acidity to salad dressings in this quinoa tabbouleh.

Other ways to use lemons in your cooking
- As a seasoning – the seasoning in this beef goulash is also delicious for sprinkling over lamb or chicken.
- In a salad dressing – mix lemon juice with olive oil, salt and black pepper for a simple salad dressing that is delicious on salads such as this pear and walnut salad, herby cabbage slaw, or green bean salad.
- In pastry – lemon zest is used to flavour the pastry in this Italian apricot tart, and would also be delicious for tarts filled with strawberries, blueberries, or blackberries.
Storing Lemons
- Store citrus at room temperature or, if you aren’t planning on using them soon, in the fridge in the crisper drawer.
- To freeze lemons: zest the lemons and freeze, then juice the lemons and pour the juice into ice cube trays before freezing. You can also slice the lemons, place on baking paper and freeze. Once frozen, move to a bag or freezer safe container and freeze for up to 3 months.
