Butternut squash is roasted with fresh thyme and whole cloves of garlic, which are then mixed into a homemade bechamel sauce together with paprika and a touch of chilli powder (which is optional). The roasted butternut squash adds a sweetness to the cheese sauce as well as giving it a lovely color! The mac and cheese is then sprinkled with cheddar and parmesan and baked until golden and bubbling.
