In a medium sized bowl combine the mayo with the greek yogurt, curry powder, mango chutney and dried apricots. Mix well and season to taste.
Add the cooked chicken and almonds and lightly mix.
Serve sprinkled with fresh chives.
Notes
Apricots: 2 tablespoon = approx. 6 dried apricots.Herbs: You can use fresh coriander rather than chives if you prefer.This recipe can easily be halved to serve 2 people or doubled to serve 8.
