Turkey Fritters

These patties are an easy way of using up leftover roast turkey and other Christmas lunch leftovers

Ingredients
  

  • 100 g cold roast potatoes mashed with fork
  • 30 g cooked carrots mashed
  • 2 cooked chipolata sausages finely diced
  • 75 g cooked turkey finely diced/shredded
  • 1 tablespoon bread sauce
  • ½ tablespoon stuffing
  • 1 egg beaten
  • flour for dusting
  • olive oil for frying

Instructions
 

  • Mix everything together well, then form into golf ball size patties. You should get around 10 patties.
  • Sprinkle some flour - about a tablespoon - on a plate, then place the patties on the flour, using two spoons, carefully turning to coat both sides in flour (they are a little fragile).
  • Place in fridge for 30 minutes to an hour to firm up.
  • Heat a dsp olive oil in a non stick frying pan over a medium heat, then fry the patties for 3-4 minutes each side until golden and hot throughout.
  • Serve straight away.

Notes

Nutritional information doesn't include bread sauce or stuffing, and is only an indication - it will vary to how you served your potatoes and vegetables (if they were roasted in butter/oil etc)
