Coronation chicken is an easy leftover chicken recipe that can be eaten as a salad, or in a sandwich or wrap.
- 2 tbsp mayonnaise
- 3 tbsp plain Greek yogurt
- 2 tsp mild curry powder
- 1½ tbsp mango chutney
- 2 tbsp dried apricots roughly chopped
- 200 g leftover cooked chicken roughly chopped
- 2 tbsp almond roughly chopped
- 1 tbsp fresh chives roughly chopped
- salt and black pepper to taste
In a medium sized bowl combine the mayo with the greek yogurt, curry powder, mango chutney and dried apricots. Mix well and season to taste.
Add the cooked chicken and almonds and lightly mix.
Serve sprinkled with fresh chives.
Apricots: 2 tbsp = approx. 6 dried apricots.
Herbs: You can use fresh coriander rather than chives if you prefer.
This recipe can easily be halved to serve 2 people or doubled to serve 8.
