This is Mini Jones’s favourite finger food at the moment. He loves avocado – he always has done – and also eats anything made from eggs, so this sandwich filling is – currently – his dream combination. Thankfully avocados are in season so I am more than happy to pander to his desires! I also do not mind eating any leftovers, although there often aren’t many, apart from the odd crust or two…

Avocado and Egg Sandwiches

Ingredients

¼ avocado

1 egg, boiled

2 sliced wholegrain bread


Method

Simply mash the egg with the avocado and sandwich between the slices of bread, cut off the crusts and slice into fingers.
