    Avocado Egg Sandwich

    This 3 ingredient avocado egg sandwich recipe is so quick and easy to make, and is loved by toddlers, kids and adults alike!

    This recipe for an egg sandwich couldn’t be simpler; in fact I am reluctant to call it a recipe. You need just 3 ingredients: bread, boiled egg and avocado. That’s it!

    The avocado provides a creaminess that mayonnaise would traditionally do in an egg sandwich, but is much healthier! This was a favourite sandwich recipe of mine to make for baby led weaning, but it was so tasty that we have continued to enjoy it whenever we want an egg sandwich for lunch over the years.

    FAQ

    Can I make this egg and avocado sandwich ahead?

    The avocado goes brown reasonably quickly, so I don’t recommend making them too far in advance. However you can boil the eggs and store in the fridge for up to 5 days.

    What other vegetables can I add to this egg sandwich?

    Some crunchy lettuce, peppery rocket (arugula) or baby spinach are delicious additions,

    My Recipe Tips

    • This recipe is enough to make one sandwich, but can easily be doubled, tripled, or scaled to however many people you need to feed!
    • Choosing a ripe avocado – squeeze the avocado gently, if it yields to the pressure then it is ripe to eat.

    Ingredients
      

    • ΒΌ avocado
    • 1 hard boiled egg
    • 2 slices wholegrain bread

    Instructions
     

    • Boil the egg and cool (this step can be done up to 5 days before).
    • Mash the egg with the avocado and spread evenly over one slice of bread.
    • Lay the other slice on top and cut in half.
    • (If giving to baby or young toddler, cut the crusts off the bread and cut into fingers).
